TROPICAL PEACH TART

Prep Time: 15 minutes
Cook Time: 8 minutes
Chill Time: 1 hour

1-1/4 cups chocolate wafer crumbs
1/4 cup finely chopped walnuts
7 Tbsp. sugar, divided
6 Tbsp. butter or margarine, melted
1 can (15 oz.) S&W Tropical Sun Peaches
1 pkg. (8 oz.) cream cheese, softened
2 Tbsp. chopped crystallized ginger (optional)
1 tsp. vanilla extract
2 kiwi fruits, peeled and sliced

Combine wafer crumbs, nuts, 5 tablespoons sugar and butter; mix well. Press evenly on bottom and sides of 9-inch removable bottom tart pan. Bake at 375F, 6 to 8 minutes; cool.*
Meanwhile, drain peaches reserving 2 tablespoons syrup. Combine reserved syrup, cream cheese, remaining 2 tablespoons sugar, ginger and vanilla extract. Spread on bottom of cooled crust.
Arrange fruit over cream cheese. Cover with plasic wrap and chill 1 hour. Garnish with fresh mint, if desired.

For quick version, use a 9-inch prepared chocolate or graham cracker crust.
