PEACH CHEESECAKE PARFAIT

Prep Time: 15 minutes

1 pkg. (8 oz.) cream cheese, softened
3 Tbsp. sugar
1 Tbsp. lemon juice
1 tsp. vanilla extract
1 cup whipped topping
1/2 cup raspberry jam
1 can (15 oz.) S&W Sun Peaches, well drained
1/4 cup gingersnap cookie crumbs (optional)

Blend cream cheese, sugar, lemon juice, vanilla and whipped topping in bowl.
Layer cheesecake mixture, raspberry jam and peaches in parfait glass, wine glass, or any tall 8 oz. glass. Repeat layers. Sprinkle with cookie crumbs. Garnish with whipped cream and mint sprig, if desired.
