BAJA BEAN DIP

1 lb. ground beef or turkey
1 can (28 oz.) S&W® Petite-Cut Diced Tomatoes Original, drained
2 Tbsp. chopped canned chipotle peppers in adobo sauce, or jalapeno peppers (to taste)
1 can (17 oz.) refried beans
1 can (15.25 oz.) S&W Whole Kernel Corn, drained
2 Tbsp. chili powder
2 cups shredded Cheddar cheese
1. Cook meat in skillet; drain.
2. Reserve 1 cup tomatoes; set aside. Add remaining tomatoes, peppers, refried beans, 1/2 the corn, and chili powder. Cook over medium heat, stirring occasionally, until hot.
3. Spoon into shallow 2-1/2-quart baking dish. Top with remaining corn, reserved tomatoes and cheese. Bake at 350 F, 5 minutes, or until cheese is melted. Garnish with green onions and cilantro, if desired. Serve warm with tortilla chips.
